Have you ever thought of doing some cucumber mint green tea popsicles? If you didn’t, here is why you should try. First, you will realize how easy and quick is this recipe to do at home. Second, it is a great way to cool down during the summer heat of the Middle East. And finally, it is loaded with health benefits. As you might already know, green tea is full of anti-oxidants and help your metabolism to burn faster. Cucumber is also a super ingredient as it also contains anti-oxidants, as well as nutrients. Both green tea and cucumber promote hydration in your body, which is particularly important during hot summer.

Here is the full recipe to create this delicious snack at home:

Makes ten 80g popsicles

INGREDIENTS

For the mint simple syrup:

  • 1 cup water

  • 1 cup sugar

  • 6 large sprigs of fresh mint

For the popsicles:

  • 3/4 cup mint simple syrup

  • 3/4 cup unsweetened green tea

  • 3 tsp fresh lime juice (from about one lime)

  • 1.5 lbs (650g) cucumbers, peeled and roughly chopped

INSTRUCTIONS

To make the mint simple syrup:

  1. Brew some green tea in hot water. You can either use our Go Green tea, which is already flavored with mint. Or you can go for Lime Punch, a green tea with lemon.
  2. Bring the sugar and brewed tea to a boil in a small saucepan. As soon as the sugar is dissolved, remove from the heat and stir in the mint leaves. Let it steap until it cools. Strain out the mint leaves and store in a glass jar in the refrigerator.

To make the popsicles:

  1. Add all of the ingredients to a blender with the liquid in the bottom. Blend until very smooth. Give it a taste – it should be a little sweeter than you might want it to be, as it will lose some of its sweetness when you taste it frozen. Add more lime juice or simple syrup, etc. to taste.

  2. Pour the mixture into your popsicle molds and freeze for 4-6 hours or overnight.

  3. You might have a little more mixture than you need. You could freeze it as extra popsicles using paper cups and popsicle sticks, or you could add some things to it and blend into a smoothie. Enjoy!

If you want to give it a creative touch, you can also add some slices of cucumber inside the molds along with the mixture. So now chill and enjoy !
