Diwali, a festival of lights and delights, also known as Deepavali, is one of India’s most vibrant and widely celebrated festivals. The Sweet Essence of Diwali

Among these, one sweet dish stands out as a quintessential Diwali treat: Kaju Katli, a delectable cashew nut fudge.

Kaju Katli: A Diwali Delight

Ingredients:

  • 1 cup cashew nuts
  • 1/2 cup sugar
  • 1/4 cup water
  • A pinch of saffron strands (optional)
  • 1/4 teaspoon cardamom powder
  • 1 teaspoon ghee (clarified butter)
  • Silver edible foil (optional, for decoration)

Instructions:

  1. Preparation of Cashew Paste: Grind the cashew nuts to a fine powder. You can add a few drops of milk to aid in the grinding process.
  2. Sugar Syrup: In a pan, combine sugar and water. Bring it to a boil and stir until the sugar completely dissolves. Add saffron strands and cardamom powder for flavor.
  3. Cashew Mixture: In another pan, heat ghee and add the cashew nut powder. Sauté on low heat for a few minutes, ensuring it doesn’t change color.
  4. Combine and Stir: Gradually pour the sugar syrup into the cashew mixture while continuously stirring. Keep stirring on low heat until the mixture thickens and leaves the sides of the pan. This process may take around 10-15 minutes.
  5. Shape and Garnish: Remove the mixture from the heat and let it cool slightly. Knead it into a smooth dough-like consistency. Roll it out into a thin layer, and cut it into diamond-shaped pieces. Optionally, you can decorate each piece with a small piece of silver edible foil.
  6. Enjoy: Let the Kaju Katli cool completely, and then store it in an airtight container. Savor the sweet, nutty delight with friends and family during your Diwali celebrations.
